Se é para sobremesa terá que ser doce . Se é para acompanhar carnes, como porco, frango ou vitela deverá ser salgado .&lt;br /&gt;Como sobremesa:&lt;br /&gt;Cozer as castanhas, cuma casca de limão( opcional). Escorrer bem e esmagar . Juntar um pouco de natas de leite, ou manteiga , ou leite. Juntar açúcar a gosto e um copinho de vinho de Oporto. Pode ser Lácrima Cristi ou tinto . A gosto. Mas qualquer um vai-lhe muito bem .&lt;br /&gt;Servir tépido.&lt;br /&gt;Com este puré pode -se preencher as filhoas.&lt;br /&gt;Pode-se adornar este puré com merengue caseiro:&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Merengue caseiro:&lt;br /&gt;Separar as claras das gemas.&lt;br /&gt;Bater forte as claras. Ir juntando a estas claras açúcar às colheradas . Pouco e pouco sem deixar de bater. Até que esteja uma massa consistente . Quando não se desligue do prato ao virar este já está pronto .  Introduz-se em uma manga de pasteleiro  e adorna-se o puré. Juntar-lhes açúcar quando estejam cozidas. Deixar pousar 6 ou 10 minutos.&lt;br /&gt;Rechear as filhoas com as castanhas cozidas e fazer com elas rolinhos. Juntar o arroz, o naco de malagueta e remexer. Juntar água ( três de água por uma de arroz) e as castanhas. Quando rompa a ferver juntar umas pingas de limão   exprimido sobre a panela e um raminho de salsa. Acrescentar sal ao gosto. Deixar ferver,  primeiro a lume forte. Logo tapar e deixar a lume brando por 40 minutos. Neste caso deverão ter sido mergulhadas previamente por duas ou três horas.&lt;br /&gt;Juntar isto tudo à massa cozida junto com uma colher de azeite cru de oliva de sabor forte e duas colheres de iogurte. Untando repetidamente a tigela com um naco de toucinho branco para que a massa não se cole ao fundo.&lt;br /&gt;&lt;br /&gt;Preparação do recheio:&lt;br /&gt;Cozer as espinafres e as castanhas em água com sal.&lt;br /&gt;Numa panela dourar cebola alho salsa e uma presa de cogumelos de temporada . Juntar as castanhas e mais as espinafres bem escorridas e bem cortadas . Salgar e juntar um pouquinho de pimenta negra. Pode-se juntar também algo de  piripiri. Juntar uma colher de farinha para que espesse um pouco.&lt;br /&gt;Com isto vão-se recheando as filhoas que se irão colocando numa travesseira previamente barrada com manteiga ou azeite . Cobrem-se com um molho de béchamel e levam-se ao forno por 15 ou 20 minutos.&lt;br /&gt;&lt;br /&gt;Para o molho béchamel:&lt;br /&gt;Põe -se uma noz de manteiga na tigela ao fogo até derreter. Junta-se-lhe a farinha (dois ou três colheres ) Remexe-se com uma colher de pau e junta-se-lhe leite sem para de remexer . Juntar sal á gosto.&lt;br /&gt;Este molho deita-se sobre os canellonis . Introduzir o limão ao fundo e continuar a rechear com:a cebola ,a maçã partida em troços e descascada, a presada de pêssegos secos, metade das castanhas mergulhadas  previamente em água por umas horas e coser com fio de cozinha apertando para que nada escape. Juntar com a corda as patas do frango ajudando assim a fechar bem tudo.&lt;br /&gt;Colocar o frango na tigela grande tapado ( +/-) e introduzir no forno dentro  da tigela, previamente untado com sal. Primeiro a 200º e logo a 150º por dois horas ou mais.&lt;br /&gt;É importante que o forno não esteja muito forte, mas que mantenha o frango a ferver.&lt;br /&gt;Este é um prato de festa para fazer muito lento e cuidadosamente.&lt;br /&gt;Na tigela juntam-se, mais tarde, também o resto das castanhas, cebola cortada , um pouquinho de azeite e um copo de Vinho de Porto tinto.&lt;br /&gt;Neste caso as castanhas devem ser remolhadas previamente em água, pois tudo vai estar assado em seco. Só com o suco que deite fora o frango.&lt;br /&gt;É por isso que deve se feito muito lentamente. O frango deve virar-se de vez em quando para que asse igual por todo.&lt;br /&gt;&lt;br /&gt;Para servir:&lt;br /&gt;Partir pela metade o frango. Cortar o peito em fatias muito finas. ( uma colher de café)&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;Duas colheres de azeite .&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;Procedimento:&lt;br /&gt;Deitar as castanhas em água fria por uma hora.&lt;br /&gt;Fazer dois cortes ao longo do lombo de porco(raxo) .&lt;br /&gt;Esmagar o alho com o sal , a salsa, o pimentão e o azeite.&lt;br /&gt;Untar o lombo com este adubo. Introduzir bem entre os cortes do raxo este adubo. Com  fio de cozinha atar o lombo para fechar os cortes e para que se mantenha redondo enquanto coze .&lt;br /&gt;Fritir agora a carne em azeite bem quente até que fique dourado e crie uma crosta exterior .&lt;br /&gt;Deitar este numa tigela a pressão com duas colheres de azeite. Pôr também na tigela a maça inteira e  descascada. Deitar na tigela as castanhas e uma folha de louro. Espremer as duas laranjas sobre a carne. ( Pode-se pôr meia de piri-piri, a gosto).&lt;br /&gt;Corrigir de água se é que fica pouco líquido. Pode-se acrescentar um copinho de porto.&lt;br /&gt;Fechar a tigela a pressão e deixar cozer por meia hora.&lt;br /&gt;Abrir , virar o lombo e dar mais uma fervedura . Cravar um garfo de cozinha(de poucas pontas e  longas para não danar a carne) para comprovar o ponto de cozido. (Não deve de passar-se nem estar pouco cozido).&lt;br /&gt;Servir com puré de pataca ou/e arroz branco.&lt;br /&gt;&lt;br /&gt;Para o puré:&lt;br /&gt;Cozer as batatas em água com sal .Quando cozidas juntar-lhes uma noz de manteiga , sal, pimenta(pouquinho) e bater com a vareta mágica ou esmagar com um garfo. Segundo os gostos. Pôr numa travesseira e verter um pouquinho de azeite cru por cima. Adornar com salsa natural.&lt;br /&gt;&lt;br /&gt;Para o arroz:&lt;br /&gt;Pôr a dourar uma pouca cebola , um dente de alho e uma chávena de arroz. Remexer com uma colher de pau sem que o arroz se torre. Deitar duas chávenas e meia de água , uma raminha de salsa , umas pingas de limão ,a espremer no momento em que comece a ferver, e sal. Tapar e cozer a fogo morno  mantendo sempre o ferver. Vinte minutos e comprovar se está seco. Juntar uma colher de azeite e as castanhas remexendo e deixar pousar tapado por 15 minutos+/-. Comprovar se admite mais água . De seguida unir a couve depois de limpa e partida em poucos pedaços ( é para que não esfarele).&lt;br /&gt;Quando a verdura esteja cozida escoar e por numa travessa para a mesa. Adornar com os ovos partidos ao meio.&lt;br /&gt;&lt;br /&gt;Numa panela fazer o rustrido: Dourar o alho e o piri-piri. Juntar o toucinho ou lardo, retirar do lume e deitar, nesse azeite quente, uma colher de pimentão. Deitar em ela o grão-de-bico que deveu ficar toda a noite mergulhado em água. Deitar as castanhas e a pataca partida escachando-a. Quando a pataca e as castanhas estejam case cozidas deitar a presinha de quinoa.&lt;br /&gt;Fazer um rustrido numa frigideira com alho, azeite de oliva e pimentão doze ( pode-se-lhe acrescentar um pouquinho de picante ,piripiri p.ex.), e deita-lo sobre o ensopado. Tirara-lhe a casca à pataca.&lt;br /&gt;Pôr água em quantidade numa panela grande. Deitar a cozer os ossos , a carne e a unha de unto durante meia hora ou mais para que tudo deite na água a sua substância.&lt;br /&gt;Partir a pataca escachando (faz-se uma pequena fenda com a faca e logo escacha-se. Isto é para  facilitar que a pataca deite fora o amido  e espesse o caldo) e por  na panela. Também as favas e as castanhas. Deixar cozer por meia hora . Juntar as nabiças partidas coas mãos.&lt;br /&gt;Deixar ferver até tudo estar bem cozido. Antes de servir, dourar o alho na frigideira em azeite. Apartar do lume e deitar aí o pimentão doce remexendo . Deitar esse molho (rustrido) logo no caldo. Provar e ajustar de sal.&lt;br /&gt;* Para fazer um bom rustrido ou alhada é importante que o pimentão abra, mas não se torre. Para isso o azeite tem de estar  quente mas não muito. Deixa cozinhar em lume brando até estarem cozidas (aprox. 40 minutos).&lt;br /&gt;Passa o conteúdo da caçarola num passa-puré ou numa picadora de carne a fim de reduzir as castanhas a puré e depois mistura-lhe a manteiga. Em lume brando, derrete 150g do chocolate com duas colheres de água.&lt;br /&gt;Envolve a preparação das castanhas com o chocolate e mistura delicadamente, até obteres uma mistura homogénea. Deita a mistura sobre uma folha de papel de alumínio colocada num molde baixo para lhe dar a forma de &lt;span style="font-style: italic;"&gt;Turron&lt;/span&gt;. Em lume brando, derrete os 100g do chocolate restante e deitar por cima como cobertura. Pode-se decorar por cima ao gosto.&lt;br /&gt;Coloca no frigorífico durante 5 horas. Retira as castanhas e escorre-as. Lave muito bem as uvas (passas) para perderem  parte do açúcar. Deite azeite numa panela (pota), junte o arroz, leve ao lume, vá mexendo e, quando o arroz estiver a ficar um pouco  alourado,  junte  0,5L  de  água quente, tempere com sal,  tape e deixe cozer  em  lume moderado (no mínimo) até o arroz estar enxuto e cozido. Junte-lhe então a manteiga, misture bem e, em seguida, junte as castanhas cozidas e as passas e misture também. Deixe ficar 5min abafado com um pano por cima fora do lume e sirva. Isto é,  numa frigideiras ponhem-se umas colheres de manteiga e engade-se farinha aos pouco remexendo o tempo todo; a continuação acrescenta-se o leite sem deixar  de remexer até que fique uma consistência bastante sólida ( se ainda não fosse engadir mais farinha e deixar cozer uns 20 min). Pode-se passar pela  batedora se ficarem grumos. &lt;/p&gt;  &lt;p&gt;A continuação engade-se o que for levar a croquete por dentro (ex. Bacalhau, carne, etc. ou de resto doutra comida já cozinhada).&lt;/p&gt; &lt;p&gt;Deixa-se arrefecer ( 2 horas no frigorífico). Mexe-se com uma colher de madeira. Vai-se  engadindo pouco a pouco o vaso de leite/auga. Cobre-se com um pano e deixa-se  repousar pelo menos meia hora. Num recipiente juntamos os  ovos, o açúcar, a manteiga diluída , o conhaque e o fermento.&lt;br /&gt;Batemos  bem e colocamos numa forma para ir ao forno durante 30-40 minutos a  160º. Podemos  fazer mais quantidade porque nos servirá para outras receitas tanto  doces como salgadas ( é um ótimo acompanhamento para carnes assadas, por  exemplo). &lt;b&gt;Para fazermos o puré basta cozer as castanhas secas num  pouco de leite e triturar, ou bem cozer farinha de castanha seca até  ficar uma consistência cremosa.&lt;br /&gt;&lt;/b&gt;&lt;br /&gt;&lt;br /&gt;Para elaborar os queque teremos que bater a clara com o sal  durante uns 5 minutos. Depois incorporamos a gema, o puré de castanhas, o  açúcar, a manteiga e o run. batemos tudo junto até ficar bem misturado. Um acompanhamento exótico realizado com base às melhores tradições maias e courelãs, uma junção entre a sabedoria do Atlântico oriental e do Atlântico ocidental. Ideal para qualquer tipo de acompanhamento: feijão preto, frango, verduras, javali, queijo, etc.&lt;br /&gt;&lt;br /&gt;Ingredientes:&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;   * 1 taça de farinha de trigo&lt;br /&gt;&lt;br /&gt;   * 1 taça de farinha de castanha&lt;br /&gt;&lt;br /&gt;   * Uma colher (sopa) de azeite tansmontano&lt;br /&gt;&lt;br /&gt;   * ½ taça de água morna&lt;br /&gt;&lt;br /&gt;   * 1 pisca de sal abundante mas não demasiado&lt;br /&gt;&lt;br /&gt;   * 1 chela, garimba ou cerveja&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Preparação:&lt;br /&gt;&lt;br /&gt;Abra a cerveja, deite num copo tentando não fazer muita escuma. Para isso, incline o copo 45º aproximadamente. Encha até aos ¾ e deixe repousar até que baixe a escuma e encha novamente até o bordo. Beba um gole. Vamos começar.&lt;br /&gt;&lt;br /&gt;Numa tigela grande, misture a farinha de trigo, a farinha de castanha e o sal. Mexa até que os ingredientes se juntem. Acrescente o azeite e a água morna aos poucos até se fazer uma massa.&lt;br /&gt;Beba um gole, e retire a massa da tigela para uma mesa enfarinhada (trigo). Amasse e beba até que a massa ficar massa. Vá acrescentando farinha até que deixe de ficar peganhenta. Não desespere, beba, que isto leva tempo. Quanto mais bem amassar, mais fofinha ficará.&lt;br /&gt;&lt;br /&gt;Acha que já acabou? Não há problema, vá ao frigorífico e apanhe outra chela, acho que ainda há.&lt;br /&gt;Deixe repousar uns minutos a massa. Divida em 6 partes e faça bolinhas.&lt;br /&gt;&lt;br /&gt;Apanhe uma bolinha e dê-lhe um murro como se fosse Bud Spencer. Aplane e estique a massa com a ajuda de uma garrafa. Se não tiver uma garrafa também pode utilizar um rolo de cozinha.&lt;br /&gt;&lt;br /&gt;Faça tortas de entre 15-20cm de diâmetro com uma espessura de entre 3-5mm.&lt;br /&gt;&lt;br /&gt;Beba um gole. Aqueça uma frigideira a lume nem brando nem forte, sem azeite nem manteiga nem nada. Quando estiver bem quente, atire uma tortilha desde o outro lado da cozinha e tente acertar no alvo. Conseguiu, verdade? Isso é porque amassou bem.&lt;br /&gt;&lt;br /&gt;Enquanto bebe vários goles da chela, espere menos de um minuto e dê a volta a tortilha, justo quando começar a fazer bolhas. Depois, espere meio minuto e dê mais uma volta. Aqui já é ao chou, dê mais uma volta, espere um bocadinho e a tortilha está pronta.&lt;br /&gt;&lt;br /&gt;Não se preocupe com nodoazinhas torradas ou churruscadas, isso dar-lhe-á o autêntico sabor a magusto às suas gostosas tortilhas!&lt;br /&gt;&lt;br /&gt;-----------&lt;br /&gt;NOTA: Depois de receber inúmeras perguntas no meu e-mail, devo acrescentar para todas as pessoas que não chegaram a ir nem à escola de noite que é possível preparar um número diferente de tortilhas. O jeito consiste em dividir ou multiplicar a quantidade de cada ingrediente para obter tantas tortilhas como seja o resultado de dividir ou multiplicar por esse mesmo número o total de tortilhas da receita. Sendo árvore, o castanheiro abre pousada para os pássaros e mesmo deixa que o pinto verdeal fure, fure como berbequim do seu bico um ninho fundo na melhor das suas p&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;span&gt;&lt;span&gt;&lt;span class="Apple-style-span"  style="font-family:arial;"&gt;&lt;span class="Apple-style-span"  style="color:#993300;"&gt;&lt;span class="Apple-style-span" style="font-size: medium;"&gt;olinhas, e que as abelhas prendam o seu enxame numa das suas coverochas, e que numa das velhas buratas mostrem os seus olhos espreitadores o mocho ou a coruja.&lt;br /&gt;&lt;br /&gt;O castinheiro, sem nada pedir, dá-nos até o trono real no real souto.
